I teach ear training to my students. I would like to be able to present a specific sound like a chord or scale and have them select from options to say what chord or scale it is. Does Quizmaker support this sort of idea?

Yes, you can import sound via an SWF flash file instead of an image to 'illustrate' your question. An swf file can be a sound or even a video.
